Salmon Pastrami Sandwich

This recipe is so fast and will melt in your mouth my mom has been making it for us kiddos for years!!!

Salmon Pastrami Sandwich

16 oz. salmon pastrami (recipe follows)

Bread and butter pickles

8 slices swiss cheese

8 slices rye bread

Horseradish sauce (recipe follows)

Butter, room temp

1.       Preheat a panini press. (If you don’t have a panini press you can toast the sandwich in a pan on the stovetop then place in oven to finish heating through.) Butter one side of each slice of bread; spread on a generous layer of horseradish sauce; place swiss on each slice; top one slice with salmon then pickles; place top on sandwich; press on Panini press 3-4 minutes or until bread is golden brown and crisp.  Serve immediately.

Horseradish Sauce

1 C mayonnaise

2-3 T dijon mustard

3 oz. horseradish, peeled and grated finely

½-1 T fresh lemon juice

1.       Place all ingredients into bowl and mix to combine.
